I do not tend to use commercial packages on the interactive whiteboard, but my own powerpoints and we have started to develop our own Notebok documents to create drag and drop exercises and integrate some of Smartboard Notebook tools (see the IWB challenge on my blog, My Languages, for further detail). The advantage of this is that the materials can be totally differentiated to your class. However I know there are quite a few multimedia resources that can lend themselves to IWB use.
I have also used with the IWB a number of online resources like Youtube videos, webpages, online games and activities-some of which can also be used offline (all links are available from my blog, right hand-side click on IWB or online activities). Otherwise, I would look at the multimedia resources available for the particular course you are planning to use if you are going for a commercial scheme. At secondary level we use "Metro electro" for French, I am pretty sure major publisher like Heinemann will have similar materials for their primary courses.
