If there's any money available for resources for Primary Languages in the school budget then a subscription to Linguafun would provide you with a whole wealth of resources for Italian as one subscription gives you access to 4 languages.

I'm not teaching Italian at the moment but when I did, I just followed a French scheme I had, changing it to Italian.
One resource I would recommend is Italiano, Italiano which has simple conversations and fun songs to reinforce the lanaguage.
